Today’s Meatless Monday recipe features one of America’s greatest loves – PIZZA!
I don’t know anyone that doesn’t love pizza. In our house, Pizza Friday and family game night go hand in hand. I’ll be the first to admit that we often order from our favorite local spot, but when we have a craving for ingredients we can’t get there….this is my go to version.
Weeknight 15 Minute Pizza with 5 Minute Pizza Sauce
My 5 Minute, No Cook Sauce
1 can tomato paste (6 oz)
1 can Warm Water (use tomato paste can for measuring)
¼ cups Olive Oil (optional)
1 clove Garlic, Minced
½ teaspoons Dried Oregano
½ teaspoons Dried Basil
½ teaspoons Dried Rosemary, Crushed
Salt and Pepper
This makes a good bit of sauce. Whatever is left after dinner, I put in a GlassLock container and freeze or keep refrigerated for a couple weeks.
Naan, Tortillas, store-bought pizza dough or your homemade dough
Your favorite veggie toppings
Cheese (mozzarella, goat, white cheddar)
Preheat oven to 450F. Whisk together sauce ingredients.
Spread sauce on dough. Add your favorite toppings and cheese. Bake until cheese is melted, about 10-15 minutes.
Some of our favorites:
1) Sautéed mushrooms, raw spinach, goat cheese topped with fresh tomatoes
2) Supreme – Saute onions, banana/green peppers, and mushrooms in olive oil until tender. Add to pizza along with black olives.
