Today’s #MeatlessMonday recipe brings you a two for – Pasta with a choice of Red Sauce or Green Sauce.
One of my favorite childhood memories involves my Grandma’s traditional Italian gravy (sauce). She would start it as soon as she cleaned up the breakfast dishes. She would tend to it all day, stirring it ever so gently from time to time. The smell of the sauce with her homemade meatballs and Italian sausage made my cousins, my brother and me crazy! We would sneak into the kitchen when she wasn’t around, quietly open the pot and dip in some Italian bread. Somehow it never mattered how quiet we were, she heard us from wherever she was and started yelling for us to get out of the kitchen. We’d take off running into the living room where Grandpa would laugh at us.
Every time I make her sauce, I look to heaven and smile at her. Sometimes I want the comfort of that “macaroni and gravy” in the middle of the week. So, here’s my 5 Minute Version. Shhhhh…don’t tell my grandma!
5 Minute Pasta Sauce
1 can organic tomato paste
1 can diced tomatoes or bruschetta
1-2 Tbsp Parmesan cheese
1-2 tsp garlic, granulated or powder
1-2 tsp onion powder
1-2 tsp Italian seasonings (oregano, thyme, basil)
salt (to taste)
pepper (to taste)
sugar (to taste, but usually no more than 1 Tbsp.)
NOTE: I don’t really measure spices. I just eyeball it and dump. So, start with a couple teaspoons and adjust to your taste.
Place all your ingredients in your magic blender, Blendtec, Vitamix or other blender type device. Puree. It might be a little on the thick side, so you can always add a little water to thin it out. Blend again to incorporate.
Boil and drain your pasta. Fresh pasta only takes a couple minutes, so grab some out of the refrigerator case. My favorite noodle is tagliatelle. When I can find it in Gluten Free, even better! I do, on occasion, make fresh noodles with our hand crank pasta maker.
Add sauce and parmesan cheese to hot pasta….ENJOY!
I also like to make Pesto instead of red sauce.
My 5 Minute Pesto
couple handfuls of spinach and/or basil
palm full of pine nuts or walnuts
couple handfuls of Parmesan cheese
Blend spinach/basil, nuts and cheese in food processor. Add olive oil until reaches the right consistency.
Pour over pasta.
