Foodie Friday: Vegetarian Recipe Roundup

If you’re a regular Powered By BLING reader, you are already aware that I’ve been on a whole food/plant-based/vegetarian journey based on my past health issue.  Through that journey I am exploring creating some of my favorites in a completely whole food/vegetarian/plant-based way (I’m going to have to come up with my own term for this).

As part of that journey, I started a #MeatlessMonday weekly linkup and was contacted by the movement to be a Pinterest contributor on their #MeatlessMonday Board

One of my biggest concerns with this new way of eating is whether I’m actually fueling my body properly for my current level of training.  So, I’m working with a nutrition advisor that is part of a local fitness challenge I’m involved with to work on the macronutrient ratios for my current level of training using this approach to eating.  Since I do not consume any phytoestrogens because of my diagnosis, a number of the traditional vegetarian protein sources are out.  

One night after getting home from sports, I was looking to make something quick, easy and light.  Looking in the refrig at what was already cooked, I just tossed some things together and put it on the table for our dinner.   We all loved it!  So now it’s a regular dish – My Family’s Quinoa Salad. (recipe below).

I love quinoa and this recipe looks delicious. I’d also love to get your recipe for the zucchini pizza boats!

Love quinoa salad and yours looks delicious! Love the naked burrito bowl too- yum!!!
