Meatless Monday: General Tso Cauliflower

I could not be more excited about today’s #MeatlessMonday recipe.  I LOVE, love General Tso’s Chicken (well, I did love it).  I loved it so much that I was really missing it, so I headed to the internet in search of some vegetarian-inspired way to make it.

General Tso’s Chicken

I came a cross two recipes (Sesame Glazed Cauliflower Wings and Tofu with General Tso Sauce) that didn’t quite hit the mark for what I was craving, so I took the best parts for my recipe from each, changed up with my own ingredients and landed on this recipe for General Tso Cauliflower!    The first step is to cut up the cauliflower.

Then, create the batter for the cauliflower – simply out of flour, almond milk and water.

After getting the cauliflower coated and in the oven to bake, I assembled the sauce.  It couldn’t be easier.  The best kind of a sauce is an easy one with few ingredients.

Saute the fresh ginger in some sesame oil.  Add some veggies, like carrot and red cabbage and cook until tender.  Next, add the broth, sriracha, coconut aminos, rice vinegar and coconut sugar.  Thicken with some cornstarch.

Pour over the cauliflower after it’s done baking and bake for another 10 minutes.  Done!

While all that was going on, I put on a pot of sushi rice.  But, you could also serve this dish with my Veggie Fried Rice.

Whichever rice dish you choose, simply put some of this delicious General Tso Cauliflower on top and indulge in this perfectly delicious, completely vegetarian Asian yumminess (is that a word?)!

It was sooo good! I used to order my Tso Extra Spicy….I just added extra Sriracha to spice it up. I might try it with Chili Garlic Sauce next time. But, I am definitely keeping this recipe!

Looks delicious! I am always looking for ways to incorporate more vegetables into my diet and this recipe looks great!
