It’s #MeatlessMonday! So that must mean I’m Linking Up with The Fit Foodie Mama and Running on Happy. Today, I’m making Vegetarian Baked Beans. This riff on Paula Deen’s Southern version is sure to please any vegetarian.
This recipe could not be more simple. It’s almost a dump and bake – aren’t those sometimes the best kind of recipes? Taste like you slow roasted it all day, but quick to throw together. If you don’t have pinto beans or butter beans in your pantry, you can even substitute canned vegetarian baked beans. I was short one can of pintos the day I made this, so I used one can of Bush’s and one can of pintos.
Combine all your ingredients together and bake. Warm Southern comfort food – vegetarian style!
