#MeatlessMonday: Baked Falafel with Tzatziki & Tahini Sauce

It’s #MeatlessMonday! So that must mean I’m Linking Up with The Fit Foodie Mama and Running on Happy

I used to think making falafel was difficult.  But once I broke it down into simple ingredients and used a few fresh ingredients, I was on my way to making this Baked Falafel a staple in my kitchen.

If you have a Blendtec or a food processor, you can whip up these Baked Falafels in less than 10 minutes.  Place a can of garbanzo beans (drained and rinsed), a chunk of onion, some parsley, and garlic in your Blendtec.  Blend and scrap down sides until all contents are combined.

When the mixture is combined, roll into small balls.  I use an 1/8 cup measuring cup for scooping and then roll the balls in my hands.

Bake the falafel and serve with Tzatziki and Tahini Sauce.

Tzatziki = plain greek yogurt, cucumber, lemon juice, salt and dill (optional)

Tahini Sauce = 1 Tbsp Tahini, lemon juice, and water to reach desired consistency

This recipe looks AMAZING! I love both falafels and tzatziki! Pinning for later, yum!

I’ve never baked my falafel! Great idea. Will definitely try this out.
