#MeatlessMonday: Ramen Noodle Salad

It’s #MeatlessMonday! So that must mean I’m Linking Up with The Fit Foodie Mama and Running on Happy

We’ve all had Ramen Noodle salad at a picnic.  This is one of those dishes that combines crisp, crunchy, sweet and salty all in one.  I made this recipe in less than 30 minutes and it lasted for a little more than a week. I ate it as a side dish, as a main, on top of veggie salad.  It just gave everything a little something extra.

The ingredients are simple – Ramen (no season packet required, throw it away), almonds, broccoli slaw, oil, vinegar, and honey.


First, you combine the almonds and the ramen and toast it for about 15 minutes.  I like to beat my ramen noodles a little with my lemon juicer to break them up! 🙂


While that’s browning up in the oven, whisk the dressing together.


Combine all the ingredients – It’s really that simple!


You end up with a quick and simple dish that is so versatile it can be an addition to most of your meals for the week.
