It’s #MeatlessMonday! So that must mean I’m Linking Up with The Fit Foodie Mama and Running on Happy. It sure is getting cold out on the soccer field! So, when we come home and the smells of a crockpot soup smack us in the face, we can’t wait to sit down with a bowl and warm up.
To start this recipe, simply chopped up the trinity of veggies (carrots, onion, celery) and saute them until tender.
Add the sauted veggies to the crockpot along with the beans, broth and other ingredients including the rind from a fresh piece of Parmesan.
About 30 minutes before serving, add your favorite small pasta noodle. I like Ditalini for this soup.
Serve it up with some fresh Italian bread and some more fresh grated Parmesan! You’ll have enough for dinner and a few lunches during the week!
