Meatless Monday: Healthy, No Oil Hummus

It’s Meatless Monday! After a week+ with family in town celebrating Thanksgiving and my now 9 year old’s birthday, I’m ready for some simple, easy meals and snacks.

Today, I’m lightening up hummus. I love hummus, but I like it a little too much and can eat half a container if I’m not careful. I’ve crafted this No Oil Hummus which uses the garbanzo bean liquid to lighten it up a little.


The ingredients couldn’t be simpler either.  Garbanzo beans, lemon, tahini, salt, paprika, and cumin.



Start by draining the liquid from the garbanzo beans, reserving it for later use.


Place the garbanzo beans, a couple Tbsps of tahini, a palm of paprika and cumin, a sprinkle of salt and the squeeze of a fresh lemon in your food processor (see recipe for more specific measurements).


Blend the ingredients, scraping down the sides a couple times until everything is combined.


Then, just like you would with olive oil, begin drizzling the garbanzo bean liquid into the running food processor until the hummus reaches your desired consistency.


Serve with veggies and naan.

That looks so yummy. I have actually never made my own hummus. Which is crazy because I realize how easy it is!
