Huevos Rancheros Chili Waffles

It’s #MeatlessMonday and today I’m cooking up some Huevos Rancheros Chili Waffles.

Sometimes you want a little extra spicy in your breakfast.  Sometimes you want breakfast for lunch.  Hey, even Mini Me’s school does Breakfast for Lunch.  In fact, that’s one of the only times she’ll ask me if she can eat lunch at school.  She’s not interested in eating the school food any other day (but school lunch is a whole other topic for another day).

I love Huevos Rancheros.  And if you’ve followed me for any time, you know I’m constantly making some recipe remake using chili.  As for homemade waffles, well, they’re a family favorite and you can use them as a base for so many recipes (including ice cream sundaes – but I digress).  So, I combined them all and made Huevos Ranchero Chili Waffles.

This recipe starts off by making a quick and dirty chili.  All that’s needed is a can of pinto beans with jalapenos, a jar of salsa (or a bit of a couple different kinds), a can of refried beans and some chili powder.


Dump it all in the pot, bring to a boil, reduce to a simmer and heat through.  Chili done!  Next, make the waffles (see recipe below). Finally, fry and egg being careful not to break the yolk.  That running yolk over everything is so yummy!!!!

Once all the individual components are cooked, assemble the dish.  Place a wedge of a waffle on the bottom of the dish, add chili, then the egg (careful!) and finally a little more chili and some shredded sharp cheddar.

These sound delicious! I am always looking for more ways to get my Mexican fix but never thought to add it too waffles!
