When I was in college, I spent a summer working at a little cafe that one of my best friends from high school worked during college. The women that lunched at this cafe mostly ordered salads to fuel their post lunch shopping. The two most popular items on our menu were the Pasta Caesar Salad and an item that consisted of a scoop of tuna salad inside half of a cantaloupe and a side of banana nut bread.
The Pasta Caesar fast became one of my favorites and although I only worked their that one summer, I continue to make this salad. It’s kind of a combination of comfort and healthy all in one.
