There’s something about the taste of raisins and nuts with grains that is so satisfying to me. I had a hankering for that taste this weekend, so I made this couldn’t-be-easier, throw-together quinoa pilaf to go with our dinner.
I started by cooking some quinoa in vegetable stock. When the quinoa was done, I added raisins (golden and regular), pine nuts, some olive oil and half of a lemon.
After literally dumping the ingredients into the pot by eyeball,
I put the quinoa pilaf over some raw spinach before serving.
The whole family loved this! It’s now on my list of easy to prep, go-to healthy grains. What are your favorite healthy grains?
