By now, you all know how I look spicy dishes. Well, you can best believe Pad Thai is on my list of favorites. I think I’ve had it twice already in the last week and Friday for lunch, I made this noodle-less version.
This is one of the those quick and easy “if you have 10 minutes” kind of recipes – my favorite kind! I use all pre-prepped produce – cole slaw mix, red cabbage, shredded carrots and sliced baby bellas.
Once the vegetables are crisp tender, add in the coconut aminos and Sriracha. Stir to combine. Then, crack a couple eggs into the center and scramble them through the veggies.
