Caramelized Vegetable French Bread Pizzas

Happy #MeatlessMonday!  Thanks for kicking off your week by joining us.  As usual, I’m Linking Up with Rachel from Running on Happy & Annmarie from The Fit Foodie Mama to bring you some amazing bites for your Meatless Monday meals!

Last week, I had a hankering for some French Bread Pizzas.  You know the kind in the freezer case in the red box.  I used to love when my mom would let me get that at the grocery store.  Usually, my mom made pizza from scratch. My grandmother – always!  I sometimes wonder if my grandmother ever ate a pizza that she hadn’t made from scratch herself.  But, I digress.

 

There’s nothing I like more than taking a food considered a “processed” food and giving it a fresh, real food ingredient makeover!  These french bread pizzas are a prefect example and they really are pretty quick to make. So, come on today’s Meatless Monday trip with me and let’s make some crispy, comforting pillows of ooey, gooey cheese and veggies!  

I start by sauteing down all the veggies – onions, peppers, and mushrooms.

While the veggies are caramelizing, I pop some bread in the oven to get it crisp.  This is sooo important to the french bread pizzas.  If you skip this step, your bread won’t get as crispy as those wonderful red box ones.

Once the bread is done and the vegetables caramelized, layer some tomato sauce, caramelized vegetables, black olives and mozzarella cheese on top of the crispy, golden pieces of bread – I used Italian sub rolls.

Pop them back into the oven until the cheese is melted and, then sink your teeth into the crispy, warm, caramelized goodness of an old classic!

Yum homemade pizza is the best! I could eat it everyday the more veggies the better. Thanks for joining us for Meatless Monday if you wouldn’t mind adding a mention to us or our button too that would be great. Thanks have a good one!
