Happy #MeatlessMonday! Thanks for kicking off your week by joining us. As usual, I’m LinkingUp with Rachel from Running on Happy & Annmarie from The Fit Foodie Mama to bring you some amazing bites for your Meatless Monday meals!
Since Cinco De Mayo is tomorrow and today is the perfect day to sit on the deck and enjoy the weather, I thought I’d bring you a little something in the spirit of tomorrow’s festivities –My Fresh Margaritas!
What I love about Fresh Margaritas is that they don’t use that horrible sour mix. If I’m in the mood for a margarita, I always ask for the bartender to make it fresh, no sour mix. The On The Rocks version of these margaritas don’t contain any added sugar or simple syrup. The Frozen version only adds sugar from the fruit.
When it’s Girls Night In, I always show up with 5 simple ingredients – Patron, Cointreau, Limes, Frozen Mango (or other fruit I might be in mood for), and margarita salt. That’s it! Super simple, no sugar/simple syrup or sour mix necessary!
When I was in my college days, I had plenty of shot glasses lying around to make margaritas, and well, let’s face it, drink shots! 🙂 Since I’m all grown up and have gotten rid of all those trinkets from my sorority days, I just use an equivalent measure – 1/4 cup. No shot glass or jigger necessary. Just pull out the old 1/4 cup measure and you’re all set.
To make the Fresh, On The Rocks with Salt Margarita (my personal fav!), place the following in a shaker to make 2 margaritas:
1/4 cup Patron
1/4 cup Cointreau
Juice of 2-3 limes (1/2 cup)
1/4 cup cold water
Pour into salt rimmed glasses and serve!
To make the Frozen Mango Margarita, put the above into a blender and add frozen mango.
The Frozen Margaritas can be made with any frozen fruits of your choice – Frozen Strawberry Margaritas, Watermelon Margaritas, Tropical Fruit Margaritas.
What’s your favorite Margarita?
