I have never really been a pancake eater. Unlike The Hubby, you’ll never see me order a stack of pancakes at breakfast. I’m more of an omelet girl. Even when I was a kid, I preferred waffles to pancakes….still do!
One morning we ventured into our new IHOP and I noticed they were offering a Harvest Nut and Grain pancake. I love nuts and bananas in my pancakes when I do make them. So, I decided to get a short stack instead of toast with my breakfast. OMG!!! I feel in love with these pancakes! (Did you see that coming???)
A couple weeks later I had a craving for them, so to Google I went in search of a copycat recipe. They were all over the place. I made a few ingredient tweaks of my own and……
After mixing the wet and dry ingredients, simply laddle some batter on the griddle and cook the pancakes until browned.
So, usually I get about this far into my pancakes and I give up. Something about them makes me feel bloated fast.
But, these pancakes were soooooo good! I actually ate ONLY pancakes for breakfast the day I made these. See….
Alas, I did give up before I finished them.
