Crockpot Italian Beef

Happy Foodie Friday! As always, today I’m linking up with Emily from Whatever Floats Your Oats, Esther from Chocolate Runner Girl, Farrah from Fairyburger and Annmarie from The Fit Foodie Mama to create awesome healthy recipes! Be sure to check out all the amazing recipes in this link up and don’t forget to add your recipes as well! Today’s theme is  Fire It Up!

It should come as no surprise that I love Italian Beef.  What? No way.  An Italian that loves Italian Beef covered with Giardiniera.  Since I’m not fortunate enough to live near Al’s Beef in Chicago, I have to make my own.

So, since I can’t go to Chicago when I get the taste for Italian Beef, I pulled out my crockpot and made an easy version.  A beef rib roast, a jar of pepperoncini (because I didn’t have any giardiniera), beef consomme and oregano.

Toss it all in the crockpot, go to work and come home to comfort!

This is a super simple version. Just dump and go. For a spicier version, you can put a jar of giardinerara instead of the pepperoncini.

Wow, this seems pretty darn simple. I think my wife could even make it, in her defense I love to cook and she hated to. We ate at Al’s the last time we were in Chicago, it was a couple of blocks from our hotel. I had my sandwich dunked, it was amazing!
