Mediterranean Pasta

Happy #MeatlessMonday!  Thanks for kicking off your week by joining us.  As usual, I’m LinkingUp with Rachel from Running on Happy & Annmarie from The Fit Foodie Mama to bring you some amazing bites for your Meatless Monday meals!  Being Italian, I love pasta because it’s so versatile.



With the exception of childhood Sunday dinners at my grandparents I like to expand the flavor profile of pasta. Those Sunday suppers always happened around the dining table with all the family over a large bowl of macaroni and gravy (spaghetti and sauce to most people), meatballs, sausage and bread and olio.  My grandfather ate pasta most days at least once during the day.  My grandmother made all kinds of combinations for him, the simplest of which was aglio e olio (garlic and oil).

So, when I make pasta, I’m never really sure how the final product will end up. It’s pretty easy to just grab some ingredients you love and throw together a quick, healthy meal that is sure to be a palate pleaser!  This Mediterranean pasta combines raw organic spinach, sun-dried tomatoes, pine nuts, kalamata olives, capers, parmesan and fresh mozzarella with some tagliatelle.  The oil from the sun-dried tomatoes was enough to provide flavor and moisture to the noodles.  Buon Appetito!

All my pasta salads are like this. I see what I have on hand and toss it together. Fortunately, it’s usually delicious. I have to say that now I have a hankering for some pasta aglio e olio. It’s still one of my favorites.
