It really is the question when you go to a deli, isn’t it? I always go through the dilemma of whether I want a traditional Reuben or the more recent take, a Rachel. And do I want corned beef or turkey? It really does put me in a pickle sometimes.
We love making our own versions at home. The Hubby is a traditionalist. Mini Me and I love cole slaw, so we usually go for the Rachel version.
This is a perfect quick meal for lunches or when you have too many things going on in your life and you need a quick dinner. The dressing is just a simple mix of 1-2 Tbsp mayonnaise, 1 Tbsp pickle relish and a couple squirts of ketchup. Then, grab your meat of choice (pastrami, corned beef or turkey).
Butter one side of your rye bread slices. Then, add make a quick cole slaw and grab your sauerkraut.
Then, we assemble the sammies.
Once we have the sammies assembled, we grill them up on our panini press. Simple, quick, easy and oh so delicious!!!
