Mediterranean Brown Rice Salad

I don’t know about you, but I need a vacation week after my vacation.  We got home yesterday and immediately hit the ground running.  The Hubby did yard work while I did laundry and sorted through the mail.  I went grocery shopping and through together a few things for meals.  Mini Me, well, she laid on the couch all day and caught up on OnDemand versions of Big Brother.  Yes, I’d say we are addicted to that show.  Shhhh, it’s our dirty little secret.

I was in the mood for something with a little more flair than just plain brown rice and veggies.  As I often find myself doing, I pulled a few things out of the refrigerator and just decided to see what they would taste like when I threw them all together.

My favorite briny green olives aren’t just for my KettleOne Extra Dirty, Extra Olive Martinis.  They also worked well in this brown rice salad.  I wasn’t really in the mood for the traditional kalamata that gets paired with these ingredients. I wanted something that gave a little bit more of a punch.


 I also chopped up some sun-dried tomatoes and fresh spinach.  After the brown rice was steamed, I mix some of it with the green olives, spinach, and sun-dried tomatoes. For that pop of freshness, I added a few fresh yellow cherry tomatoes we picked up on our way home from the beach at a little roadside farmer’s market.  A little drizzle of balsamic glaze I had in the refrigerator and BOOM! – a Mediterranean Brown Rice Salad I will make over and over again was born.



The best thing about this dish was that there were so few ingredients I will actually be able to replicate it.  I really hate it when I throw a dish together on the spur of the moment and then when it turns out to be one the family loves, I can’t remember what I actually did to create it…let along recreate it.

I knew these flavors would be right up your alley, Annmarie! I think when we take vacations, we should get a few extra days as a sort-of gift to recover. I wonder if my boss would go for that? Hmmmmm. LOL

I have a spinach problem. I got a bag as big as my cat and it is almost all gone (and I’m the only one who eats it).
