One of my goals for this year is to stay consistent nutritionally without giving up any of the foods I love. In the past, I’ve told myself I’m not going to eat certain foods anymore and that just ends up making me want to eat them even more. Pizza is one of those foods. Who could ever give up pizza? I mean seriously. If you tell yourself you can give up pizza, I think you might just be fooling yourself.
My favorite way to make pizza healthier is to start with either a naan or whole wheat pita as the base. Then I like to load it up with sauteed veggies, protein and my favorite cheeses. Today, I’m highlighting one of our family favorites, BBQ Chicken Pizza. First, I start by sauteing the red onions. Some people put their veggies raw on the pizza before it goes in the oven, but I got this trick from my mother who always sautes the veggies before she puts them on the pizza. It brings out the natural sugar in the vegetables and really gives you another layer of flavor.
Next, add your homemade bbq sauce or a couple tablespoons of your favorite to the naan along with the sauteed onions.
Top with sliced chicken breast. Hint: this recipe is perfect for getting rid of leftover chicken your refrigerator.
Add your favorite, cheese……
Then, bake in the oven or grill on the grill until cheese is melted and naan is toasted.
You probably noticed I have mine laying on aluminum foil. On nights when I literally have no energy for cleanup, I always do this. It makes cleanup easy….no pizza stone to clean! BONUS!
