Naked Meatball Sub

So, I’ve been watching my carbohydrate intake for about seven months now. It doesn’t mean I don’t crave bread and pasta anymore. I mean I am Italian.  But, I’m happy to say that I’ve lost 53 lbs so far!!! 

 I grew up eating meatballs on a weekly basis, so I could never give them up. I sure do miss Sundays at my grandma’s because nobody made meatballs like she did. Now, when I want a Meatball Sub, I just make my G’mas meatballs and throw together this “Naked” version of a meatball sub.

After combining the meat with egg, spices and Parmesan cheese, I roll it into meatballs and place them on a baking sheet.

By baking them at a high temperature, the meat will caramelize and turn a nice gold brown.  Of course, if you want to cook them on the stove in gravy (pasta sauce) all day, you can do that too.

When the meatballs are done, place a couple in the bottom of an ovenproof dish, sprinkle with more Parmesan cheese and shredded mozzarella and return to the oven until the cheese melts.

What you are left with is a Naked Meatball Sub you won’t want to wait to dig into!

This is genius! I’m not doing low-carb, but I do try to watch my macros the best I can. Meatball subs are amazing!
