Veggie Packed Sloppy Joes #SundaySupper

When I was a little girl, one of my favorite meals was Sloppy Joes. The combination of flavors and that soft roll my mom always put it on made my tummy for jump for joy!

As I got older I started eating my mom’s recipe over rice, potatoes, noodles. There was just something comforting about it especially being so far from home. It was like having dinner with my family even though they were hundreds of miles away.

A couple years ago, I started reducing the amount of sugar in the sauce and pumping up the veggie content.  I start the base of my recipe with onions, celery and peppers.

Once the veggies are softened a bit, I add in the meat. I prefer to use meatloaf mix because it gives me the flavors of three different meats, but you can use ground beef, chicken or turkey. I’ve been known to use them all in this recipe.

Once the meat is browned, simply drain the fat and add all the other ingredients. Bring to a boil, reduce the heat and simmer for 20-25 minutes until veggies are soft and sauce is thickened.

Since I’ve been on a low carb kick lately, I love this recipe over zoodles. But, I also just like to put a serving in a bowl and shovel it in….it’s that good! If you’re not watching your carbs, it would be great over a baked sweet potato or regular potato too.
